We are seeking a skilled Pitmaster / BBQ Chef with a minimum of one year of professional barbecue experience to join our high-energy kitchen. You will be responsible for preparing, smoking, and grilling meats and sides using traditional American BBQ techniques, ensuring every dish delivers exceptional flavor, tenderness, and consistency.
Key Responsibilities•Meat Preparation: Trim, season, and prepare brisket, ribs, chicken, and other cuts for smoking or grilling.•Smoking & Grilling: Operate and manage smokers, grills, and BBQ pits; monitor cooking times and temperatures to achieve perfect results.•Flavor Development: Create and refine rubs, marinades, and sauces to maintain our signature taste.•Quality & Consistency: Ensure every dish meets high standards of flavor, texture, and presentation.•Food Safety & Hygiene: Follow all HACCP and food-safety guidelines, keeping work areas clean and organized.•Inventory & Waste Control: Manage meat portions, rotate stock, and minimize waste.•Team Collaboration: Work closely with kitchen staff to coordinate service and, when needed, train junior team members in BBQ techniques.
Requirements•At least 1 year of proven experience as a Pitmaster, BBQ Chef, or Grill Cook.•Strong knowledge of smoking, slow-cooking, and grilling techniques, including wood selection and temperature control.•Ability to work in a high-temperature, fast-paced environment and stand for long periods.•Solid understanding of meat cuts, flavor profiles, and portion control.•Excellent time-management and teamwork skills.•Commitment to cleanliness, food safety, and consistent quality.
Preferred Skills•Experience with large-scale smokers and high-volume service.•Creativity in developing new BBQ dishes, rubs, and sauces.•Passion for authentic regional BBQ styles (e.g., Texas, Carolina, Kansas City).
