You will be responsible for the primary and secondary fabrication of meat, poultry, and seafood according to the hotel’s luxury standards. The role involves managing portion control, maintaining inventory freshness, and ensuring that all cuts are prepared with precision for the various fine-dining outlets within the property. You will work closely with the Sous Chef to ensure strict adherence to HACCP regulations and food safety protocols, maintaining a clean and organized butchery station at all times.
